Benedetto , Executive Chef and Owner of Vecchia Roma graduated culinary school in Rome, Italy. After graduating he worked for many years at the Ristorante Corsetti. His path then took him north to Milano and Castiglioncello, Italy where he worked at Laviletta and Rugiaitica for many years.
He moved back to his home to Abruzzi and managed Hotel Fillipone, located in Giove Dei Marsi in the Abruzzi National Park. Benedetto was responsible for all aspects of the Hotel from the function facilities – restaurant and rooms.
Benedetto came to the United States in 1995 and worked as an executive chef in restaurants such as Scalinatella and Il Pannino
Benedetto brings to Vecchia Roma a homeland feel and taste with food that is as close to Italy as one can get without leaving the United States.
